Aloo Gobi - Potatoes / Cauliflower
Pacifies Kapha - Pitta
Ingredients - For 2 portions:
3 medium size potatoes.
1 small cauliflower
1 onion
1 garlic clove
1 ginger thumb
1 T spoon of cumin seeds, mustard seeds, turmeric, chili powder, garam massala, sea salt
2 spoon of vegetable oil or ghee 
Optional tomato paste
Fresh coriander to garnish 
  1. Cut potatoes in equal parts. Boil

  2. Cut cauliflower florets. Boil

  3. While the vegetables are cooking, add mustard seeds to a hot pan with a bit of ghee or vegetable oil.

  4. Once seeds pop, add cumin seeds, chopped fresh ginger, garlic, onion. Let it cook until onions are soft

  5. Add turmeric, garam masala, chilli powder. Mix well.

  6. Drain vegetables once cooked (soft) and add them to the spice mix. Cover. Cook on low heat for 3-5 minutes.

  7. Optional, add tomato paste with a few spoon of water

  8. Serve with a pinch of sea salt, a small amount of ghee (clarified butter), fresh coriander and steamed basmati rice or chapatis (indian bread).
