Vegan Chai Cookies
Pacifies Vata - Kapha
Ingredients - 

Dry ingredients:

  • 2 tsp Chai tea

  • 1 Tbsp | 100 g wheat flour 

  • 1 Tbsp | 100 g rye  flour

  • 1 cup | 100 g unrefined cane sugar or jagery

  • 1 tsp cinnamon

  • 1 tsp baking soda

Wet ingredients:

  • 100 ml plant based milk

  • 4 Tbsp almond butter

  • 2 Tbsp coconut oil

Instructions

  1. Preheat oven to 170°C 

  2. Put all dry ingredients in a large baking dish and mix.

  3. Add the moist ingredients to the flour mixture. First stir with a fork and then knead with your hands until a slightly moist dough has formed.

  4. Now form little balls and place them on a baking tray. Press them gently with your thumb

  5. Finally, put a pumpkin seed and then put the Ayurvedic chai cookies in the oven for 10 minutes.

  6. When they have finished baking, let the cookies cool on the baking tray.

  7. When the cookies have completely cooled,  you can add some icing sugar on top to decorate. Keep them sealed in a cookie jar so they won't dry out. Enjoy!
