Ginger Carrot Soup
Pacifies Vata - Pitta - Kapha
Ingredients for 2

  • 2 small potatoes

  • 3 carrots

  • 1/2 Tsp | Turmeric powder

  • 1  Garlic clove

  • 1 shallot or small red onion

  • 1 piece of Ginger

  • 1 Tsp of coconut oil (for cooking)


  1. Peell the carrots and potatoes

  2. Rinse the vegetables

  3. Slices in small pieces and put in a large sauce pan

  4. Cover with water

  5. Let it boil and cook for about 20 minutes until vegetables are soft

  6. On the side, slice the ginger, the shallot or onion and garlic

  7. Add the coconut oil in the pan, let it melt before adding the thinly sliced ginger, shallot, garlic

  8. Let it cook slowly until golden brown

  9. Once the vegetables are soft, remove from the stove 

  10. Mix the vegetables with the remaining water. Add more water if the soup it too thick for your taste

  11. Serve the soup hot, add the cooked ginger, shallot and garlic on top

  12. Add a few drops of olive oil, turmeric powder, pinch of salt and back pepper

  13. Garnish with coriander or parsley if you wish

  14. Enjoy!
