Palak Paneer - Cheese / Spinach
Pacifies Vata - Pita

Ingredients - For 2 portions:
250g of paneer / indian cottage cheese
500 g of fresh spinach (one full bag)
1 onion
1 garlic clove
1 ginger thumb
1 T spoon of cumin seeds, mustard seeds, turmeric, chili powder, garam massala, sea salt
2 spoon of vegetable oil or ghee 
Half pot of creme fraiche / oat cream
Fresh coriander to garnish

  1. Heat mustard seeds in oil or ghee. Once seeds pop, add cumin seeds, chopped onion, chopped garlic, chopped fresh ginger.

  2. Add garam masala, turmeric, chilli powder. Mix well. Let it cook.

  3. Once onions are soft, add the paneer cut in small dices.

  4. Let it roast for a bit until edges are slightly brown.

  5. Add washed raw fresh spinach. Cover. And let it steam for a few minutes (until spinach has soften).

  6. Add cream.

  7. Let it cook on slow heat for a few minutes

  8. Add sea salt to taste and fresh coriander

  9. Serve with Basmati rice or chappatis or naan bread
